cheap and simple veggie lunches for work?

I was wondering if any one has any ideas for cheap lunches for work?

Im on a really tight budget for the next few weeks and im not able to do a lot of cooking in my house.

I was wondering if any one has any ideas for cheap but nutritious lunches and snacks I can take to work but which dont require a lot of preparation?

The only thing I can think of is variatons on beans, pasta and couscous..but then im really not much of a cook :)

Any ideas would be really welcome :)

Here are some ideas

Here are some ideas that worked for me years ago:
(if you have time, prepare your own chapatis, to include with any of these)
* Fruits and nuts, seeds
* Raw salads with cooked beans, or soup
* Black eye peas cooked somewhat soft can be mashed to make a spread (you can include chopped bell peppers, spices, or home-made mayonnaise, or just use as is) other beans could be used, but I found black eye peas work well. The spread can be used to accompany raw vegetables and a salad; or with chopped tomato, whole olives, and finely cut lettuce, etc used as a spread on chapatis.
*Try different variations of rice, beans and tomato, depending on what seasonings are used, and whether you include chopped bell peppers and chilies, celery, you can make very easy one-pot meals to resemble in flavor italian spaghetti(basil, oregano, bell pepper, hing), mexican chili (cumin, bell pepper, chili, hing). You can also use thyme, celery seed, red and yellow peppers.

If you don't mind using a slow-cooker, you can think of the Lord while preparing the vegetables and beans and then let it cook. You might want to add the rice toward the end of the cooking time. It only takes up a small space on a table. It would be ready to offer to the Lord and take with you when you go to work in the morning. (if you are not able to do much cooking where you are)

When I had very limited funds, and worked two jobs while attending college (which meant very little time), these are some of the foods I prepared.

Have you looked thru' the "Cooking and Recipes" and "Kitchen" sections ? The recipes written in long traditional format can look scary but many are very easy, and ingredients need not be rigid.

There are, not only one-pot recipes like you are suggesting, but others like pancakes (rava dosa - Kitchen, mung dosa), sandwiches and wraps, vegetable noodles, cakes...

I'm sure devotees will give you more suggestions.
