Ginger Snaps

My daughter and I just finished baking a batch of these. We enjoy baking them for Krsna in the colder months of the year. They are easy and fairly quick to make, a good recipe to make with kids. They are also very delicious, especially still warm from the oven; Krsna seems to like them warm.

You'll need:

2 1/2 cups flour (we use white whole wheat)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup maple syrup
1/4 cup molasses
1/2 oil (walnut oil is nice, or ghee)
5 tbsp finely chopped fresh ginger

Optional: Mix in 1 tsp freshly ground spices (clove, mace, nutmeg, allspice, cinnamon or whatever suits you)

Preheat oven to 350F (177C). In a large bowl, stir together the flour, baking powder, baking soda, and salt. Add the maple syrup, molasses, oil, and ginger. Stir together gently until "just mixed" (it will be slightly dry/crumbly seeming.) Using your hands, roll about a ping-pong ball size of dough, put it on a lightly-oiled or parchment covered baking sheet and press down to flatten slightly. Bake for 12-15 minutes. Let cool on wire rack for about 5 minutes before offering to Krsna while still warm.

Makes about 15 cookies.

Best served with a cold glass of milk! Enjoy Krsna prasadam!
