Ingredients:
- 10 grams of agar-agar (vegetarian gelatine replacer)
- 300 ml fresh orange juice (use biological oranges)
- 2 ripe mangos (about 600 gram in total)
- 4 Tsp fine honey
- 1 tsp pure rose water
- 400 ml heavy cream
Preparation:
Combine the agar-agar with the orange juice. Puree or mash de pieces of mango (allow small pieces of the mango to be seen). Combine the mango puree with the orange juice and bring to a full boil. Cook for 2 minutes (bubbling on raised heat) and take the pan from the cooking stove, add the honey and rose water and set aside to cool down a bit. Beat the cream (with a little sugar if preferred). Wait until the mango puree starts to solidify and fold the cream in. Pour the mixture in a turban-shaped pan or bowl and put in the refrigerator for cooling down completelely.
Finish: decorate with a yellow or orange flower!
